Pork Cutlets Madras

 

Preparation time: 30 minutes plus hour standing

Cooking time: 10 minutes

Serves 6

6 pork cutlets, 3 cm thick

1\4 cup apricot jam

1\4 cup apricot juice

2 tablespoons white wine

2 tablespoons oil

1 tablespoon honey

2 teaspoons Madras curry powder 1\4 teaspoon chilli powder

 

1. Trim pork cutlets of any excess fat. Combine apricot jam, juice, wine, oil, honey, curry powder and chilli; mix well.

2. Place pork cutlets in flat glass dish and pour over apricot mixture. Cover and stand for 1 hour at room temperature.

3. Drain, reserving marinade. Cook pork cutlets over glowing coals for about 10 minutes, turning once or twice and basting frequently with reserved marinade.

Hint

When buying pork look for flesh that is light pink with creamy white fat: this indicates a tender cut. It is not necessary nowadays to cook pork for a long time. Light cooking makes the meat succulent.

Ham Steaks with Mango Glaze

Preparation time: 15 minutes

Cooking time: 6 minutes

 

8 ham steaks,

1 cm thick

1 tablespoon oil

1 x 420 g can sliced mango

1 tablespoon orange juice

1 tablespoon butter, melted

1 tablespoon brown sugar

1 teaspoon grated fresh ginger
1\4 teaspoon ground cloves

1. Using a small sharp knife score the edges of ham steaks at 5 cm intervals to prevent steaks curling. Brush ham steaks with oil.

2. Process or blend mango until smooth, add orange juice, butter, sugar, ginger and cloves, and process for about 30 seconds.

3. Cook ham steaks over glowing coals for about 2-3 minutes each side, basting frequently with mango glaze. Serve ham steaks immediately with any remaining mango glaze.

Hint

When buying packaged ham steaks check for the use-by date. Once opened, remove ham from original wrapping and store in the coldest part of the refrigerator covered with plastic wrap or foil.
